Our culinary team shops the ByWard Market in person each morning at 6 a.m., selecting heritage-breed proteins, heirloom vegetables, and artisan dairy from vendors whose names appear on the menu beside their ingredients.

Six counter seats overlooking the open kitchen are released each service for guests who want to watch the full menu constructed in real time - a position that comes with a supplementary course and direct conversation with the chef.
